If you are German-speaking, your main instance of interest for communities will probably be feddit.org with the main community being [email protected] (and inofficially [email protected]) - check it out if you haven't yet

There used to be pornlemmy but it died (and was too restrictive in my opinion)
I don't know why not the one you named, as far as I know it's the only remaining general porn instance. There's just a few scattered communities on other general instances, and there are specialty instances like your own.
There's also a bit on Mastodon but mostly reposting from reddit.

Do we have an auto mechanics community yet? One of the only things I still really miss from reddit was JustRolledInToTheShop.

This is a great post we should do a round up like this every few months. I know one of the hardest things was finding the right communities when so many were created and just became bot spam from reddit which did it a disservice since while it was from a good intent to create a bunch of content quickly. It stopped everyone from posting becase there was no engagement with OP. So it just looked like spam.
