On a smashburger kick lately
A very new obsession for me. Been trying to make the perfect smashburger in my cast iron.
Nothing fancy. Store bought buns and frozen fries cooked in the air fryer. I hope to step up my game!

Stuffed Pork Chops
Stuffed with sautéed shallot, garlic and pork sausage, arugula and shredded gruyere/swiss mix. Seared the pepper crusted fat sides, and baked it to a perfect 145° paired with roasted green beans in a French onion sauce and sautéed golden brown gnocchi with garlic shallot and wilted arugula.

Leftover Potatoes deglazed with Redwine and an "omlet"
Plan was the potatos with eggs scambled over top...

Peppermint tea
Our neighbor grew peppermint in some pots but the plants are happily growing to everywhere so they grew from his side to our side.
Today I brought my scissors and cut off a bunch of them and made peppermint tea marrocean style.
So first brew a bit of green tea which we got from some work colleagues of my partner from China. Then throw away the first tea brewed because it has some flavors we don't like. After that put it as much peppermint as fitts in and put a rediciolous amount of sugar on top. Put boiling water on it and brew for some time.
Both hot and cold it's like drinking peppermint candy, delicious!

Watermelon feta salad
This was very much a "to taste" recipe since I didn't really measure anything out exactly, but it included:
- 1/2 a seedless watermelon, diced
- 1 block feta
- 1 shallot, diced
- 1 lime, juiced
- basil to taste
- mint to taste
- olive oil to taste
- balsamic vinegar to taste
- sea salt and pepper (to taste)
With how unspecific it was it came out fantastic. I'm actually kicking my past self for not trying it sooner it's so good. Will probably pull this out again for the 4th

Selfmade Crispy Korean Kimchi Pancake
- 1 to 1 part water and Korean pancake mix
- one hand full of kimchi, cut in small pieces
- generous amount of frying oil

Midsummer dinner
Last Friday was midsummer, but because I'm not in Sweden but in Korea I had to improvise with ingredients which I could find here.
- Toast Skagen
- Fried salmon
- Gravad lax
- Crisp bread with cheese
- This years small potatoes
- Absolut vodka
- Danish Heineken
- Danish Somersby apple cider
- Strawberries with whipped cream

First colcannon attempt
For supper I made colcannon for the first time, spicy Korean eggplant and BBQ pork cutlets. Whew it was great and I am stuffed.

Quesabirria de res, with compound butter
I made quesabirria de res and proveletta cheese with consomme. My little innovation is that I gave it a pat of cilantro garlic compound butter with flake salt on top. I'm gonna die happy. These are the best tacos I've ever made. They taste better than being thin, god help me.

Venison Steaks for Father’s Day
Brined overnight. Sous Vide bath seasoned with roasted garlic, homegrown basil, oregano, & Rosemary for 2 hours at 130° before searing in cast iron.

Chinese Style BBQ Pork
Chinese style BBQ pork on sauteed onions, spicy stir fry broccoli, white rice.

Panna cotta with raspberry sauce
Used this recipe for the panna cotta (though I did fudge the numbers on the gelatin and just used the whole packet since there wasn't really enough to save) and this recipe for the raspberry sauce. She uses sour cream in her recipe which I've never heard of, I might try it next time but for right now I just wanted the basic recipe. This was delicious as expected from anything made of heavy cream and smothered in raspberries

A simple pasta amatriciana
- pasta
- tinned tomatoes (used 1/4 heinz pizza sauce leftovers)
- tomato pureè (leftovers)
- garlic
- cheddar
- 2 slices of bacon
- oregano
- 1/10 amount of cream cheese (leftovers)
- Onion (mix of red and brown leftovers)
