My brain likes to spite its flesh and bone prison by refusing to send the signals that tell the stomach it's empty and needs food or water.

Are you really? Are you less you if you amputate your limbs? Are you your thoughts? Then what is aware of having thoughts?...
You are a series of electric impulses interacting with a construct of flesh, blood and bone. You have adopted this organic machine so you may traverse the material plane and interact with other flesh golems. This is life and in time you will grow weary of it. Only then will your impulses dissolve into the void and you will become truly one with the universe.
Or at least that's what my mum told me at bedtime.
The person certainly is a series of electrical impulses 🙂 But what's aware of the person's story is what was there before the body existed and will be there after the body is gone.
They're made of meat.
