Goat cheese and walnut quiche
6 eggs, goat cheese, sun dried tomatoes, walnuts and 2 leeks. Topped off with shredded cheese. Very delicious.
Edit: also 2 spoons of crème fraiche
Tinga Tacos

I subbed the peppers sauce with rehydratedred Chiles hatch peppers and some other pepper I lost the original package to. I also use the broth I soaked the peppers in for the broth. And actually cooked chicken thighs. So basically only followed the instructions.
Beef and Broccoli

Sauce 1 Tbsp cornstarch 2/3 cup beef broth 3tbsp oyster sauce 1 Tbsp sesame oil 1 tsp chili garlic paste(or more)
Stir fry 1 tablespoon soy sauce 1 Tbsp dry sherry(I used a red wine) 1 Tbsp brown sugar 8 ounces of strip steak (I had stew meat) 1 medium head of broccoli 2 tablespoon oil 1 medium onion Garlic
For the sauce mix 2 tablespoons of broth and cornstarch the. Set aside. In a bow mix all other sauce ingredients.
Mix the soy sauce sherry and brown sugar then add the beef and combine.
Boil broccoli in salted water for 2 minutes then drain and add to an ice bath.
On high add half the oil to a wok and once smoking add the beef then stir constantly until brown. Remove meat and set aside.
Add rest of oil, soften the onions then add garlic til fragrant. Afterwards add all ingredients but the corn starch slurry. After returning to a boil drizzle the slutty and cook til thickened.

tomato loaf
We were gifted a bunch of tomatoes so I made this tomato loaf. I used this recipe, https://www.youtube.com/watch?v=KjEwRcTwU-g&t=1 I couldn't find sun dried tomatoes not in oil so I didn't use them, and pinenuts were crazy expensive so didn't use those either. I did add a whole clove of garlic and some Italian seasoning. Loved it, ate a whole loaf with the family once it cooled. I'm curious about adding bits of mozzarella into it next time.

Spaghetti Carbonara with charred garlic scapes
I'm sure every Italian in a 2000km radius is gearing up to tell me why I'm wrong for using charred scapes in this otherwise authentic carbonara, but they tasted good so...
Simple Cheese Pizza
There are a lot of pizza posts in here but I figured I'd add my own since I lovemaking home pizza.
The recipe for this is the same day pizza dough from Flour Water Salt Yeast (FWSY). Flour is Caputo 00 Flour.
The tomato sauce is the smooth sauce from FWSY. Its a raw sauce but I found it really tasty on the final product, really easy to make if you have a blender, and much better than anything sold at the store.
~ 4oz of cold mozzarella on top (the cheese still broke a bit though, maybe I'll try freezing next time)
I used a pizza steel and a 500 degree home oven (maxed out) for 1h before putting the pizza in. Baked for maybe 8 to 10 minutes. Can't remember exactly. I mostly just look at it until it "seems" done and take it out and then put basil on top.
Pretty happy with how it turned out in the end, its not particularly round but definitely tasty.

I bought those fries in the store and sprinkled some fajita style herbs and spices over them. It was a great burger.
