Most of my original subs come from .world so I don’t know what’s worth following on .ml, lemmygrad, hexbear, etc.
Maybe I could even extend this question to what communities in non major instances are worth subing too.

Hexbear calls itself "leftist", though its userbase seems to lean ML.
i suspect that hexbear is the most active instance on lemmy by far; but if it wont be good for you if you can't handle genz/gena sensibilities or are not atleast vehemently anti-capitalist.

you can see how well above it's weight hexbear is punching when it comes to active users; communities like slop, badposting, and chapotraphouse in particular.
You can go to the specific instance you have in mind and browse "Local" every once in a while.
