You can actually, but the Senate has to confirm it in a ⅔ vote, and even the Senate Republicans aren’t interested.
OP meant "someone who is no longer in office" not "impeach someone and remove them from office"
The House has impeached previously after resignation and the Senate voted that it had jurisdiction to try that impeachment.

The selling influence stuff is tenuous if not impossible to prove as it’s mostly political speculation and the republicans doing their best to try and find a boogeyman. Plus even if it would 100% true; then everyone in congress would be guilty of that, and there’s no way they would want to risk setting a precedent.

He was on camera bragging at a public event how he blackmailed the Ukrainian government to fire Burisma's prosecutor, while his son was a board member. The emails and witness testimonies are pretty conclusive.
There's plenty of evidence. The problem is 1. Lack of political will to actually do anything substantial about it and 2. This is merely a political cudgel for the elections. The Republicans are using the impeachment in a cynical way to scare their potential voters back in line, and to keep discussion around Biden's corruption going. A trick they aptly learned from the Democrats.
After the elections, whoever loses will be crying how the election was stolen from them, and the cycle will begin anew.
Btw, this is exactly how Roman politics devolved during Julius Caesar's time and how they ended up with the dissolution of the republic by Octavian.

Notice how that video makes zero mention of his son? AFAIK it was pretty well known that the US (as well as the EU) was pressuring Ukraine to get rid of corrupt officials. Right wing propaganda uses clips like the above to try and paint a totally different picture by claiming it pertains to whatever fantasy bs they've dreamed up, simply by posting the video alongside their bs text.

Plus that prosecutor wasn’t even the one investigating Hunter, it was the guy that replaced the fired one! So why would Biden be fine with the new guy opening an investigation but not the old guy who was corrupt as hell?

He got fired half a year after Biden said he asked for the guy to be fired. Why did they wait so long? Did they forget? If I was dead set on removing a threat, I wouldn't wait a six months to get around to it.
Also Biden stated before that event where he "bragged" that he asked for the prosecutor to be sacked because he failed to investigate Burisma. Not because he was.
This is basic information you could find, its not that hard to google. Stop listening to talking heads on the news.
Plus the case had been shelved by the Ukrainian government in 2014. There was no active case going on, so what would be the point in axing the prosecutor?

No, his son was using his dad's name to gain influence, but Biden had no involvement with those business deals. I'm not saying nepotism should be legal or that family members of political figures should be capable of benefiting from their relative, but there are no laws preventing this.

Crimes are by definition law breakers. So, provided that you're saying that Biden committed some crime, then yes, they have broken some U.S. law.

A detailed list would surely require declassifying every single DoD, CIA, etc. document of any sort related to any African nation. We're only getting glimpses of fuckery on that continent as US capital panics over China making better and more substantial deals going forward.
But as far as out in the open, well, that depends if you accept the (US supported at one point) notion of "a nation's laws which are grossly immoral can be overridden and actions taken under said laws deemed illegal by an international court" aka the Nuremberg trials of (far too few) top Nazis post-WWII.
I would include many actions Biden supports under that classification including, but not limited to: the continuation of the embargo against Cuba, continued support for Israel, continued support of Saudi Arabia, continued sanctions and no attempt to normalize relations with North Korea/DPRK, warmongering against China (maybe not a crime atm, but if/when some war starts because of it...), sanctions against the people of Russia generally, arming and supporting continued war in Ukraine instead of peace agreement, etc. Tired of listing shit. Haven't even started in on domestic issues. Allowing the police to continue as they are is in itself a crime worthy of... a fair trial and just consequences :). For example he could stop cop city if he gave a shit so I hold him complicit personally for his inaction there and many other places. If you think he can't do anything, refer to LBJ and how he forced integration in public schools. Yes every president is guilty basically upon stepping into office. Yes Biden didn't do this all alone. Yes congress and scotus and countless others are guilty and complicit, but you asked for crimes of Biden and due to his position as POTUS (and I'll kindly spare him the crimes he did in congress and as VP participated in) he gets to inherit all that stuff especially when a lot of it can be snapped away with an executive order or a phone call.
