I was thinking about this, do we do crop rotation anymore? Or do we just rely on fertilizers?

So what exactly do you rotate through?
Live, not love, haha but if you are wondering about the crops it's usually soybean -> wheat -> corn cycle in the fields.

Check out no till farming, it's making a come back. they have different plants every season to prevent the soil blowing away and other benefits specific to each plant
