I hope this directory will help you find the PeerTube platform (instances/servers) that fits your needs. I must say, I am a little worried how few platforms actually meet the criteria I've set. It's possible I've missed some, so please let me know in the comments. Enjoy.
General platforms
The following directory consists of PeerTube platforms that fits the following criteria:
- A general platform.
- Registration is open.
- Follows (federates) at least 500 PeerTube platforms.
- Provides some amount of storage space for users.

You should always go to a platforms /about page and read up on the rules and the features enabled on the platform. In some cases, registration requires approval by moderators. If you are interested in streaming, also make sure to check if this feature is enabled on the platform you wish to register on.

I run Spectra Video at https://spectra.video. We have gated signups: basically, someone fills out a request form, we review it, the account gets approved within a short turnaround time, and the user's channel gets created.

Your list shows that out of currently 986 known instances only 6 are federated to more than 500 platforms. That not a lot, and show peertube is very fragmented.
You should explain what you mean with "Peertube platforms", are they instances or something else ? I'm curious to know how you know they federated to x number of other "platforms". Is is shown on each "platforms" anywhere ?

Oh, ok for the explanation. I didn’t know about the name change. You can find on jounpeertube too. It’s only talking about plateform.
