I’ve not heard them called Minnesota sushi, but pickle wraps are delicious! My vegetarian friend cheats once or twice a year, and one of the few things they eat are pickle wraps.
Let them know that tofurkey deli slices make great substitutes for the ham. I'm especially a fan of the peppered ones. They're a little thin, so might want to double up.
