Yes, arms crossed is usually a defensive posture, they're not liking what you're saying.
Yes, eyes averted is a tell for being uninterested or dishonest.
Yes, tilting one's head means they're open to listening, defenses down.

Exactly right. Sometimes I see women do it unconsciously while walking past. I am monogamous with my wife but it makes me feel good. People decide if they would be willing to have sex with one another in the first five seconds. Not that they would all act on it, far from it. It's a nearly unconscious decision process that ends in a finger hair curl sometimes.
