I have heard rumblings about people putting mayonnaise on the outside of their bread used for grilled cheese sandwiches and it being the best thing ever. I haven't had the guts to try it myself. Has anybody heard the rumors and/or done this? How did it turn out?
Also good. Heat up a cast iron skillet, use a teensy bit of butter to grease the pan, put a little bit of mayo on the outside of the bread slices, and you’ll end up with grilled cheese perfection.
I've tried this as well - I still prefer butter, but I can see why some people might like mayo better. I think the salt content in the butter is what makes the difference for me, maybe I could try salting the mayo to get the best of both worlds.
I'm a big advocate of the hybrid approach: mayo on the bread, butter to grease the pan. The mayo adds a crisp (not crunchy) texture and browns wonderfully, but is helped by the flavor of the butter.
Some butter on the inside of the bread is also great.
