I heard something to do with Nitrogen and …cow farts(?) I am really unsure of this and would like to learn more.

Unless it's meat synthesized in a lab, it requires the forced breeding, enslavement, abuse, and eventually murder of sentient animals which don't jive too well with the golden rule.
