I don't agree with your premise. There's plenty of examples of coaches winning after losing one or more Super Bowls.
Coaches that have lost a Super Bowl before winning one:
- Hank Stram (won IV after losing I)
- Don Schula (won VII after losing III and VI)
- Tom Landry (won VI after losing V)
- Dick Vermeil (won XXXIV after losing XV)
- Bill Cowher (won XL after losing XXX)
