Meal prep can be so uninteresting, but this seems to have some deep rich flavors that should make for a wonderful dinner and eventually work lunch. Fingers crossed.
Hmm, interesting. I love cumin though! I have found that when quinoa is the main star, it gets an odd flavor sometimes. Quinoa doesn't seem to absorb flavor like other grains.
